Eat Well on a Budget! Workshop Recipes

As part of TCV’s Health for Life in the community programme with Mondelez, our team in Birmingham has created a series of recipes to support their Healthy Eating cookery classes. These recipes use home-grown produce and make tasty, seasonal meals that won’t break the bank.

Breakfast Wrap

Scrambled eggs and vegetable breakfast wrap

Ingredients

  • Wholemeal breakfast wraps
  • 7 cherry tomatoes
  • ½ sliced avocado
  • Spinach

Optional Extras:

  • Slice of lean ham
  • 1 scrambled egg

Method

Fill your wholemeal wrap with 7 halved cherry tomatoes, ½ sliced avocado and a large handful of spinach.

Smashed Avocado on Toast

Smashed Avocado on Toast with sundried tomatoes and olives

Ingredients

  • ½ avocado
  • Pinch of salt and pepper
  • Slice of toast, rice/lentil cakes

Optional:

  • 1 sliced medium tomato or other salad vegetables

Method

Mash half an avocado in a bowl with a pinch of salt and pepper to taste.

Spread on a slice of your favourite toasted bread or rice or lentil cakes.

For a optional extras, top with a sliced medium sliced tomato, or sundried tomatoes and olives, as shown here.

Homemade Baked Beans

Homemade Baked Beans in a saucepan

Ingredients

  • 240g of tinned beans of choice in water
  • 500g tomato passata
  • Pinch salt and sugar

Method

Add your drained beans to your tomato passata with a pinch of salt and sugar.

Makes 4 portions of beans

Roast Vegetable Couscous Salad

Roast Vegetable Couscous Salad

Ingredients

Suggestions include:

  • Courgettes
  • Aubergine
  • Mushrooms
  • Peppers
  • Tomatoes
  • Baby Corn
  • Asparagus
  • Onions
  • Favourite salad Ingredients

Method

Roast vegetables of choice in oven with drizzle of oil.

Prepare couscous as per instructions on packet.

Add and mix in cooked vegetables.

Serve with favourite salad.

Homemade Pitta Pizzas

Homemade Pitta Pizzas with salad.

Ingredients

  • Individual pitta bread
  • Low fat cheese

Suggested sauce: Tomato puree, green pesto

Suggested toppings:

  • Tomatoes
  • Onions
  • Mushrooms
  • Peppers
  • Sweetcorn
  • Olives
  • Pineapple

Method

Apply sauce to pitta breads (for a crispier base, bake in the oven for a few minutes beforehand).

Top with grated low fat cheese and your choice of toppings.

Homemade Veggie Burgers

Ingredients

  • 1 small potato (sweet potato or white potato)
  • ½ can of mixed vegetables
  • Breadcrumbs
  • Favourite salad ingredients

Method

Peel and chop your choice of one small sweet potato or white potato.

Place in pan of boiling water until softened.

Once cooked take out and drain.

Lightly mash.

Add ½ can of mixed vegetables.

Form into burger shapes and coat in breadcrumbs.

Cook.

Serve with salad.
