A Recipe for Summer!

As part of TCV’s Health for Life in the community programme with Mondelez, our team in Birmingham has created a series of recipes to support their Healthy Eating cookery classes. These recipes use home-grown produce and make tasty, seasonal meals that won’t break the bank.

Summer Fruit Pudding

Below you will find a recipe for a simple summer fruit dessert, perfect to enjoy on hot summer days! If you like trifle you are sure to like this healthy summer alternative, made using fresh berries and Greek yogurt. 

Glass of berry and yoghurt pudding in a garden

Ingredients:

  • Fresh mixed berries of choice (Photos show blackberries and blueberries)
  • Sugar free strawberry jelly
  • Greek yogurt

Recipe:

  • Make up your sugar free jelly as per the instructions on the packet, add your fresh berries and set in the fridge
  • When your jelly has set, take it out the fridge and layer your Greek yoghurt on top
  • To add an additional layer, make a berry compote by reducing any left over berries in a pan with some water. Leave to cool and once cold, layer over your yoghurt
  • Serve and enjoy!
